Summer is in full force at the moment and what better way to cool down than with these homemade Thermomix Strawberry Cream Ice Cream Popsicles. The popsicles are made from just three ingredients so they're really quick and simple to make.
Conventional Method for Ice-cream Making
A Thermomix or food processor can be used to blend strawberries with cream and condensed milk. This is very simple ice cream. There is no need to own an ice cream maker or make a traditional creme Anglaise. The mixture is poured into popsicle moulds and chilled overnight.

Strawberry Cream Ice Cream Bunny Moulds
I have been asked so many times about these bunnies. They were purchased so long ago through an international company and I can't remember who the supplier was.
Another great idea is to fill snack-sized sandwich bags with the ice-cream mixture. I particularly liked pouring the ice cream into the bags and sealing them prior to freezing. Using this method means there is no chance of spillage in the freezer when "helpers" check to see if they're ready!
Take a look at the Mixshop! They have fabulous ice-cream moulds which are really reasonably priced. This recipe will make about 12 ice-creams, so it would be handy to have at least 2 moulds.

Thermomix Strawberry Cream Ice Cream Popsicles
Ingredients
- 350 g strawberries remove stem & leaves
- 220 g condensed milk
- 350 g thickened cream
Instructions
- Place strawberries and condensed milk in TM bowl. Blend 30 sec/Speed 6.
- Scrape down the bowl.
- Add the cream. Combine 40 sec/Speed 4.
- Scrape down the bowl. Blend 40 sec/Speed 4.
- Place 12 silicone popsicle moulds on a tray that fits in your freezer space.
- Pour the ice-cream mixture into the moulds and insert the wooden stick.
- Place the treats in the freezer overnight.
- To serve, remove the popsicles from the moulds.

This recipe has ingredients specifically designed to be solid enough to be on a stick. It would get any softer by churning it.

Hi Jackie
The ice-cream can be placed into an ice-cream container but it will need to be removed from the fridge prior to serving to allow it to soften a little. Also, instead of using ice-cream moulds you can put the mixture into small single serve ziplock snack bags and freeze them ice-cream like that.
