Classic Lunchbox Thermomix Zucchini Slice

The Thermomix Zucchini slice is one of my favourite “go to” recipes. It’s packed with healthy zucchini plus the bacon & cheese makes it irresistible.

Whenever I’m looking for a quick, healthy meal to serve I inevitably fall back on this dish.

The recipe ticks all my boxes, it’s delicious, quick to make and everyone always LOVES it! The best part is it includes hidden vegetables, plus the leftovers make a great lunchbox idea. There is always a fight over who gets to take the leftovers to lunch or school.

Zucchini Slice Tip

  1. This recipe freezes well so if you’re one of these super organised mums you could make and freeze the recipe ahead of time. Cut the slice into serving sizes before freezing. The individual portions can be used for school lunches, or single serve dinners on busy nights.

    Unfortunately, I have never been that organised, so my tribe fights it out for the measly leftovers.

  2. Note I’ve made the Thermomix zucchini slice in a slice tray and a mini loaf tin. If you do use a loaf tin make sure you line it with baking paper so it doesn’t stick.  You could also make these in large muffin trays with cupcake wrappers. The cooking times will alter depending on what tray you use.

Serving Suggestion

The zucchini slice makes a “figure friendly” main meal when served with a large, fresh salad.

This has been one of my most popular recipes because it's simple and delicious!

  • 550 gm zucchini
  • 220 gm onion
  • 250 gm bacon
  • 200 gm cheese (block)
  • 1 cup SR flour
  • 1/4 cup oil
  • 5 eggs
  1. Preheat the oven to 180 degrees celsius and line a baking tray with baking paper.

  2. Cut the cheese into large cubes and add it to the TM bowl. Grate 2 sec/speed 7.

  3. Remove the cheese from the TM bowl and reserve it for later in a large bowl.

  4. 1/4 the onion and add it to the TM bowl. Blitz 3sec/speed 7.

  5. Remove the onion from the TM bowl and reserve it into a small bowl.

  6. 1/4 the zucchini's and add it to the TM bowl. Blitz 3sec/speed 5.

  7. Remove the zucchini from the TM bowl and add it to the bowl of onions.

  8. Squeeze the excess liquid from the onion and zucchini and combine it with the cheese in the larger bowl.

  9. Add the bacon to the TM bowl. Blitz 3sec/speed 5.

  10. Remove the bacon and add it to the reserved onion, cheese and zucchini mixture.

  11. Crack the eggs into the zucchini mixture, add the flour and oil. Stir by hand until just combined.

  12. Pour the mixture into the prepared tray and bake for 40- 45 minutes or until the slice is golden and feels cooked through when pressed in the centre.

  13. The slice is delicious served hot or cold.

The zucchini slice makes a great lunch idea and can be frozen in serving portions.

    Can you substitute the bacon for a non-meat alternative?

    1. Hi Agatha,
      Yes you can substitute the bacon for 3/4 cup of sun dried tomatoes. It’s still absolutely delicious.

    What a great recipe. Thank you.
    Made muffin size ones (24), omitted bacon & substituted with carrot. Added a little salt, black pepper & basil.
    Cooked for 20mins..
    Fantastic. Ready to be delivered to a customer who wanted courgette muffins.

    I was wondering why the inside of the zucchini slice is still very moist and soggy despite putting in the oven for > 45min?

    1. Hi Tracey, as the zucchini is moist, you must wring it out after chopping to remove as much of the liquid as possible to prevent the slice being moist and soggy. If you find it moist, try leaving it in the oven at a lower temp (ie, 100*) for 10-15 minutes to remove the moisture
