Instructions
Place butter, sugar and egg into the TM bowl. Beat 1min/Speed 5.
Scrape down the bowl. Beat again 1 min/Speed 5.
Scrape down the bowl.
Add the flour, salt, baking powder and bicarb soda to the butter mixture. Use dough setting. Knead 30 sec.
In a large bowl add the cornflakes, choc bits and marshmallows.
Add the cookie dough to the cornflake mixture. Mix until well combined. Don't worry if some of the cornflakes get a little bit crushed.
Prepare 3 cookie trays with non-stick paper.
Take about ¼ cup of dough and form a ball. Place the dough ball on the baking paper and flatten a little.
Continue this process until all the dough has been used. The mixture makes about 15 cookies.
Chill the cookie dough in the fridge for 30 minutes.
Preheat the oven to 180 degrees celsius.
Bake the cookies for 12-15 minutes. Depending on how chewy or crunchy you like your cookie.
Remove the baked cookies from the oven and let them cool completely on the tray.
Store the baked cookies in an airtight container in the fridge.
Notes
The cookies will be crumbly when they first come out of the oven. Leave them to cool on the baking tray.
