Say hello to my vibrant green, Thermomix pea and ham soup this winter. It's full of delicious pulled ham and topped with sour cream and parmesan cheese.
Place the onion, rosemary and garlic in TM bowl. Chop 3 sec/Speed 9.
Add the 1300g water and stock paste in the TM bowl.
Place the internal steam basket in the TM bowl.
Break up the bacon bones and add to the basket. Cook 60 min/100 degrees/Speed 3.
Use tongs to break apart and rearrange the bacon bones. Add additional 200ml hot tap water to TM Bowl. Cook 50 min/100 degrees/Speed 3.
Remove the internal steam basket and reserve bones.
Add the potato to the TM broth. Cook 20 min/100/Speed 2.
Meanwhile, use tongs and a fork to remove meat from the bones. Reserve meat in a bowl for later.
Add the peas and additional 200g hot water to the soup. Cook for 7 min/Varoma/Speed 2.
Blend soup over 2 minutes, starting at Speed 3 and working up to speed 9.
Return all but 50g of reserved ham to the soup.
Serve the soup in individual bowls and garnish with the bagel slices.
Add remaining ham, peas and shaved parmesan to the top of the soup.
If desired finish with fresh dill, basil, sour cream and cracked pepper.
This soup freezes well. Pour the soup into ziplock bags and store in the freezer as individual serving portions for a quick, winter warming meal.
