Heat a non-stick frying pan or sandwich press. There is no need to use oil but you can use a small spray of oil if desired.
Add 4-5 fritters to the hot pan and cook until bubbles appear on the top.
Flip each fritter and cook through.
Repeat until all the batter is cooked.
Serve with cottage cheese and a slice of ham or smoked salmon.

Corn Fritters also make a fabulous cooked lunch. They can also be frozen and heated in the microwave.Notes:1/ 800g is the weight of the can of corn before it is drained.2/ Oiling the frying pan is optional if you are using a non-stick pan. Any other pan should be given a light spray of oil before each batch of corn fritters.
