These Thermomix Lemon Bliss Balls taste like decadent cheesecake filling rolled in coconut! Except, unlike the dessert, these little bites are perfectly healthy.
Place all the ingredients in TM bowl except the coconut for rolling. Blitz 10 sec/Speed 9.
250 g raw cashew nuts, 75 g desiccated coconut, 1.5 TBS coconut oil, 85 g maple syrup, 10 g fresh turmeric, 60 g lemon juice, 15 g lemon zest
Scrape down the bowl.
Blitz again 5sec/Speed 7.
Scrape down the bowl and place in the fridge for at least one hour. This will allow the mixture to firm up prior to rolling.
Roll the mixture into 16 balls.
Place the reserved coconut in a bowl. Roll each lemon bliss ball in the coconut to coat.
45 g desiccated coconut
Refrigerate the bliss balls until required.
Notes
When removing the lemon rind use a sharp paring knife to remove the zest only. The white pith under the lemon rind is very bitter. Avoid adding pith to the bliss balls or they will become bitter.
The mixture will appear quite soft and moist at room temperature. To make rolling the balls easier refrigerate them for an hour. Once chilled the bliss balls will be much easier to roll and coat in coconut.
Store the Lemon Bliss Balls in the fridge for 1-2 weeks. These are best eaten straight from the fridge as when they warm up they will soften.
