Poke bowls make a healthy, light lunch or evening meal, they're ideal for summer when the weather is hot and you don't feel like being in the kitchen. This recipe is for a tuna poke bowl. The novelty pink sushi rice and edamame are cooked in the Thermomix but instructions are given for the rice cooker.
Place purple cabbage in TM bowl. Blitz 3 sec/Speed 9.
Add the water to the cabbage. Blitz 3 sec/Speed 9. Scrape down the bowl.
Place the sushi rice in the internal steam basket. Wash it well under running water.
Place the internal steam basket in TM bowl.
Add sugar, salt and 60g vinegar to the TM. Place the lid on the TM but leave the MC off.
Place Edamame in the deep Varmoa basket in a single layer. Add the Varoma with lid, to the top of TM. Cook 20min/Varoma/ Speed 3.5.
Once TM is finished turn the rice out into a large bowl and pour over the rice wine vinegar. Stir through gently, cover with a tea towel and allow the rice to cool.
Arrange four serving bowls next to the prepared ingredients.
Add the cooked rice to one half of each bowl.
Divide the salad leaves between each of the bowl. Arrange the bowl so that salad fills one half and rice fills the other half.
Carefully arrange remaining ingredients around the bowl allowing some of the pink rice to show through.
When you're ready to serve, allow guests to add their own dressing and sushi seasoning.
If you're making this recipe in the Thermomix it's best not to leave the machine alone!
There is a chance the Thermomix may vibrate as you cook the rice, especially whilst the cabbage is raw and being moved around by the blades. This will settle down as you cook the rice and cabbage. If you don't like the vibrating simple blitz the cabbage again. The smaller the cabbage leaves are the less machine vibration.
