  • 120 g baby spinach
  • 60 g parmesan cheese cut in four pieces
  • 6 garlic cloves
  • 2-3 fresh red chili
  • 40 g light olive oil
  • 185 g Tuna in olive oil
  • 185 g Tuna in brine
  • 80 g lemon juice 2 lemons
  • 320 g linguine
  • 1200 g water
  • 1 teaspoon salt

Garnish

  • ½ sliced red chilli
  • 1 TBS parsely chopped

Instructions
 

Tuna Sauce

  • Place a ThermoServer or bowl on the Thermomix bowl and weigh in the spinach.

  • Reserve for later.
  • Place the parmesan cheese in the Thermomix bowl. Chop 5 sec/Speed 9

  • Reserve for later.

  • Add the garlic and chili to the Thermomix bowl. Chop 3 sec/Speed 9
    6 garlic cloves, 2-3 fresh red chili

  • Scrape down the bowl and add oil. Saute 4 min/Varoma/Speed 1 (MC OUT)
    40 g light olive oil

  • Add all the tuna to the Thermomix bowl including the liquid. Cook 2 min/Varoma/Soft Spoon (Reverse Blade)
    185 g Tuna in olive oil, 185 g Tuna in brine

  • Add lemon juice. Saute 30 sec/Varoma/Soft Spoon (Reverse Blade)
    80 g lemon juice

  • Stir the tuna mixture through the spinach in the Thermoserver. Replace the lid and reserve.

Cooking Pasta

  • Add water to the Thermomix bowl. Heat 10 min/120 degrees/Speed 3
    1200 g water
    Add water to the Thermomix bowl
  • Remove the MC from the lid.
  • Add salt and linguine to the water. Cook 11 min/100 degrees/Speed 1
    1 tsp salt, 320 g linguine

  • Use the internal steam basket to drain the linguine.
  • Add the linguine to the ThermoServer and stir through.

  • Garnish with parsley and chili.

  • Serve with parmesan.

Notes

If you prefer to use just tuna in oil swap for 1 x 425g can and use all the oil.
NOTE: The oil helps make the tuna linguine dressing so at least one can should be tuna in oil.
