Homemade Truffle Aioli is a great way to stretch out the last remnants of your truffles. This recipe makes a delicious, creamy aioli with a garlic & truffle flavour.
Truffles have such a short season and are notoriously expensive but I love the intoxicating aroma and flavour. When I am lucky enough to get my hands on some truffles I try to do everything I can to maximise their use. Making this truffle aioli allows you to spread these aromatic little fungi a lot further, giving that umami flavour hit to any dish you would usually have with mayonnaise.
If you haven't already made mayonnaise in the Thermomix you will be amazed at how easy it is to do. Homemade mayonnaise is honestly the best thing since sliced bread... I hope you're also making bread!! Anyway, their is no flavour comparison between commercial produced mayonnaise and the homemade "real deal".
How long will fresh Truffles last?
Like most fresh produce, truffles have a limited life expectancy. They are best enjoyed as soon as possible after harvesting. Once you have purchased your truffles they will last about 10 days if they are stored correctly. After this time the aroma and flavour will decline quite rapidly.
How to Store Truffles
Truffles should be stored in a cold, dry environment. So they are best stored in the fridge.
- Dry the truffles
- Wrap them in absorbent kitchen paper
- Place in a small airtight container in the fridge.
How can I have the truffles experience last longer?
Adding some truffles to a carrier can help you stretch your truffles out a little further.
Consider some of these options if you are nearing the ten days life expectancy of your truffle and have some left over.
- Truffle Butter - Blend grated truffle with creamed butter and store in fridge.
- Honey Truffle - Warm some honey and add grated truffle, store at room temp in a jar.
- Truffle oil - add grated truffle to a warmed, mild oil and decant into a bottle, store at room temp.
- Store truffle in an airtight container with eggs for truffle flavour eggs.
- Truffle Salt - combined grated truffle with salt flakes and place into a jar.
Truffle Aioli Food Processor Method
- Place garlic, salt, pepper, truffle and egg in food processor. blitz for 10 seconds on high.
- Turn the food processor on to a medium speed, slowly drizzle oil and lemon juice into the machine over 1-2 minutes.
- The aioli should start to thicken and emulsify.
- Place into a jar and store in fridge.
Tips for making any Aioli
Making homemade aioli from scratch in the Thermomix is really quite simple if you follow these tips.
- all ingredients are best used at room temperature
- add the oil and lemon juice more slowly when you first begin to emulsify the ingredients.
- finish adding the liquids with 15-20 seconds before you turn the machine off.
- Always use the butterfly whisk.
- the aioli will thicken a little further after it’s been refrigerated.

Truffle Aioli - Thermomix Method
Ingredients
- 1 clove garlic
- ยผ teaspoon salt
- ยผ teaspoon cracked black pepper
- 1 egg
- 3 g black truffle up to 5g if desired
- 50 g lemon juice
- 300 g mild flavoured oil
Instructions
- Place garlic, salt, pepper, egg and truffle in TM bowl. Blitz 3 sec/Speed 9.
- Scrape down the bowl and add butterfly whisk. Put the lid on the bowl with the MC in place.
- Turn the Thermomix to 2min/Speed 4.
- Slowly drizzle the oil and lemon juice onto the lid alternating between the two as the motor runs.
- keep gradually adding the oil and remaining juice over the 2 minutes until it is fully combined.
- Refrigerate until needed.
