1lemonjuice only
450goilI like to use grapeseed, macadamia or almond oil but you can use any lightly or non flavoured oil.
Instructions
Traditional Thermomix Coleslaw Method
Place the green cabbage in the Thermomix. Chop 5 sec/Speed 4
400 g green cabbage
Reserve in serving bowl.
Place the carrot in the bowl. Chop 4 sec/Speed 5
1 large carrot
Add to the reserved cabbage.
Add the shallots and parsley to the cabbage.
2 long green shallots, 15 g fresh parsley
Toss the ingredients to combine.

Cutter Attachment Method
(TM5 & TM6)Add the shaft to the TM Bowl. Build the cutter attachment with the dark grey slicing blade facing up.
(TM6) From the home screen, slide across to the functions menu and select slice mode.
(TM5) Turn the blade speed to 4, reverse blade).
Feed the cabbage through the chute.
Remove the cabbage and reserve in the serving bowl.
(TM5 & TM6) Reverse the blade so the light grey side of the blade is facing up. This is the grating side.
(TM6) Select grating on the functions menu - Thick.
(TM5) Turn the speed selector to 4
Feed the carrot into the chute. Reserve in the bowl with the cabbage.
Add the shallots and parsley to the cabbage.
Toss the ingredients to combine.
Reserve
Garlic Aioli
Add the garlic, salt, and pepper to the TM bowl. Mince 3 sec/Speed 9.
1 clove garlic, ¼ teaspoon salt, 4 black peppercorns
Scrape down the TM bowl.
Add egg and half the lemon juice. Mix 3 sec/Speed 4.
1 egg, 1 lemon
Add the Butterfly whisk to the TM bowl.
Set the timer for 3 min/speed 4. Slowly add the oil and lime juice
Alternate between the lemon juice and the oil until the time is finished.
450 g oil
Reserve aioli in a jar to dress the Apple Slaw
Assembly
Serve the coleslaw with a spoonful of dressing.
Reserve any remaining garlic aioli and refrigerate until needed.
Notes
PLEASE NOTE:Nutritional information is for the Thermomix coleslaw only and not for the dressing. The dressing makes two jars of garlic aioli, but only a small portion is used in the salad.Garlic AioliFor best results make sure all the ingredients for the aioli are at room temperature. This helps the emulsification process.
