    Momofuku Cornflake Cookie Thermomix Style

    I'm always looking for a new and interesting cookie recipe for the kids' lunchboxes. Today I had cookie cravings so I wanted to make something with EXTREME flavour. Something that would satisfy my taste buds and knock the kids' socks off! The Momofuku Cornflake cookie was just what I was looking for. These cookies are the BOMB!! WARNING, you won't be able to stop at one... oh and they're not at all healthy, but they do have oodles of lunchbox appeal.

    The cookies include cornflakes, chocolate chip and mini marshmallows for a truly decadent treat. The marshmallow gives the cookie a delicious hit of oozing, sweet goodness, whilst the cornflakes lend a slightly savoury flavour. The recipe has a generous 1 ¼ teaspoon of salt that works really well with the sweet ingredients. So what we have is a sweet, salty and chewy style of cookie. If you like a crunchier cookie just leave it in the oven for a little longer.

    Now, I have to mention that the original authentic Momofuku Cornflake cookie recipe has a few more steps. I was actually completely uninspired when I saw how many steps were involved before I would be able to eat one of these babies! The recipe even included a recipe for the cornflake crunch component. I decided I would simplify the recipe and convert it for the Thermomix. So this is my disclaimer, "this is not the authentic Momofuku Cornflake Cookie recipe", but it's super delicious and much easier to make.

    The only issue I had whilst I was making these babies was the chilling time. The cookies need to rest in the fridge for 30 minutes prior to cooking. I made the mistake of tasting a little bit of the cookie dough and from that moment on the cookies were in dire jeopardy. The cookie dough tasted so good they nearly didn't even make it to the oven!

    Usually, if I make the same cookies twice in a row the biscuits tend to sit abandoned in the cookie jar. No one eats them! Not these cookies, no matter how often I make them they magically disappear.

    Ingredients
      

    • 230 g butter room temp
    • 115 g brown sugar
    • 1 egg
    • ½ teaspoon vanilla paste
    • 255 g plain flour
    • 1 ¼ teaspoon salt
    • ½ teaspoon baking powder
    • ¼ teaspoon bi carb soda
    • 150 g cornflakes
    • 65 g mini marshmallow
    • 150 g milk chocolate bits

    Instructions
     

    • Place butter, sugar and egg into the TM bowl. Beat 1min/Speed 5.
    • Scrape down the bowl. Beat again 1 min/Speed 5.
    • Scrape down the bowl.
    • Add the flour, salt, baking powder and bicarb soda to the butter mixture. Use dough setting. Knead 30 sec.
    • In a large bowl add the cornflakes, choc bits and marshmallows.
    • Add the cookie dough to the cornflake mixture. Mix until well combined. Don't worry if some of the cornflakes get a little bit crushed.
    • Prepare 3 cookie trays with non-stick paper.
    • Take about ¼ cup of dough and form a ball. Place the dough ball on the baking paper and flatten a little.
    • Continue this process until all the dough has been used. The mixture makes about 15 cookies.
    • Chill the cookie dough in the fridge for 30 minutes.
    • Preheat the oven to 180 degrees celsius. 
    • Bake the cookies for 12-15 minutes. Depending on how chewy or crunchy you like your cookie.
    • Remove the baked cookies from the oven and let them cool completely on the tray.
    • Store the baked cookies in an airtight container in the fridge.

    Notes

    The cookies will be crumbly when they first come out of the oven. Leave them to cool on the baking tray.
