Thermomix vinegar wash is used to ensure the bowl is completely clean. Creating the perfect meringue for pavlova or macarons involves more than just whipping egg whites. Egg whites need a clean environment, free from grease or any traces of fat. A vinegar wash will remove any residue and is recommended before attempting any recipe which requires whipped egg whites.
Fat inhibits the egg whites from properly aerating and creating the structure necessary for meringue. It prevents the meringue from achieving the hard peaks required for these recipes.
The most effective method to ensure the residue is removed is performing a Thermomix vinegar wash before starting the meringue-making process. In this tutorial, I will guide you through the steps performing an effective vinegar wash.
Other Uses for the Vinegar Wash
Vinegar is highly acidic. If you have stubborn, burned on residue on your Thermomix bowl the vinegar wash can help left the residual. In this instance add 100g of vinegar to the water. Heat at Varoma temperature for 10 minutes with a blade speed of 3. Allow the vinegar and water to sit for 30 minutes or so before you attempt to scrub the bowl again.
When you are cleaning the bowl please only use the recommended cleaning brushes and scrubs. The bowl can be permanently damaged with abrasive steel wool or similar products.
What to Do Next?
Once your Thermomix bowl is clean you are ready to proceed. Ensure the bowl is completely dry. Then follow the recipe to start your meringue, macaron or other whipped egg white recipe.
You will find that with a perfect clean bowl you will be able to achieve the stiff peaks associated with perfect egg whites.
FAQ Thermomix Vinegar Wash
If you don't have vinegar you can use my sparkly clean method. It will work the same way due to the acidity of the lemon.
Put your Thermomix Bowl and utensils in the dishwasher on a hot cycle. Don't have other dirty plates etc. (glasses are fine) Allow the dishwasher to clean and dry the bowl and utensils.
I prefer to use white vinegar. It's all I have ever used so I wouldn't want to advise you on something I don't know.

Thermomix Vinegar Wash
Ingredients
- 1000 g water
- 50 g white vinegar
Instructions
- Place water and vinegar in the bowl.1000 g water, 50 g white vinegar
- Add butterfly whisk to the Thermomix Bowl.
- Heat 10min/Varoma/Speed 3.
- Remove the butterfly. Blitz the water 5 sec/Speed 7
- If time permits, remove the MC and place the spatula through the lid. Allow it to soak for 5 min.
- Discard vinegar water and rinse.
- Dry with a clean towel or absorbency paper until completely dry.

Other Thermomix Cleaning Tips
- Regular Maintenance: There is more than just the bowl to clean! The base unit can also be cleaned with a damp cloth. Remove the air vents and clean those with the recommended brush. Regular maintenance and cleaning of the Thermomix will keep it clean and ready for various cooking tasks.
- Be Gentle: When scrubbing the bowl, avoid using abrasive materials that could scratch the surface.
- Check Seals and Components: Periodically inspect the seals and components of your Thermomix to ensure they are not getting a build up of food and they are in good condition.
