Chicken cacciatore is a classic family meal which is fast and full of flavour. Although this meal is made completely from scratch it can be on the table in 40 minutes with the help of your Thermomix.
My recipe includes loads of fresh vegetables and herbs, so although it's simple to make and uses humble ingredients the resulting dish has bucket loads of flavour. I guarantee it will be a dish you add to your recipe rotation.
Another "selling point" for this recipe is the leftover sauce. The recipe will leave you with about 380gm of super rich, super delicious passata sauce. Bottle the sauce for the following nights' meal. The passata sauce is perfect for a pizza or pasta sauce and will keep 1 week in the fridge.
Chicken Cacciatore Family Friendly Variations
I have 5 children and they have all had their moments of being "fussy eaters" so I know how hard it can be to add a recipe to the meal plan which includes unusual ingredients or strong flavours. My trick is to start small with new ingredients.
Olives: halve the number of olives in the recipe and just serve them to the adults. Let the kids know they don't have any on their plate. If they do get an olive just tell them to push it to the side of the plate. I find doing this repeatedly the kids start to get curious about the new ingredient. Also, they get desensitized to the look of the "suspicious" item as it poses no threat.
Feta: Swap out the feta for slices of mozzarella cheese to make the dish more palatable (and fun) for kids.
Rosemary: Make sure this herb is blended well. If your children are small, consider halving the herb as it is a strong flavour for little kids.
Serving Suggestions
Chicken Cacciatore is such a versatile meal. You can serve it with so many different sides to give variation to the meal.
LCHF or Keto Sides
Add a simple green salad to the table with balsamic dressing for a low carb and low-calorie meal.
Cauliflower mash is on trend at the moment for those trying to lose a few kilos or reduce their carbs. I've made a delicious Creamy Herb & Parmesan Cauliflower Mash which is also low calorie and super tasty. This was a great match to the Chicken Cacciatore.
Traditional Sides
No diet restrictions? Fabulous, this dish can be served with any of your fabulous carbs.
Go hard with crusty bread slathered in butter, creamy mashed potato or the family-friendly pasta. Anything which will soak up the delicious sauce will make the perfect addition to the meal!

Classic Chicken Cacciatore Recipe Thermomix
Ingredients
Rich Tomato Sauce
- 1 teaspoon peppercorns
- 20 g garlic
- 200 g onion cut in quarters
- 120 g carrot unpeeled cut in quarters
- 75 g celery cut in quarters
- 1 sprig rosemary strip the leaves off the woody stem
- 40 g oil
- 100 g prosciutto or pancetta
- 2 teaspoon dried oregano
- ½ teaspoon Chinese 5 spice
- 700 g fresh tomato cut in half
- 1 TBS balsamic vinegar
- 1 TBS brown sugar
- 130 g white wine
- 200 g red capsicum cut into strips
- 200 g green capsicum cut into strips
Chicken Cacciatore
- 900 g chicken thigh fillets
- ¼ teaspoon salt and pepper
- 1 teaspoon dried oregano
- 60 g pitted Kalamata olives
- 100 g creamy Danish feta crumbled
- 2 TBS fresh parsley OR Thyme (optional garnish)
Instructions
- Preheat the oven 200 degrees Celsius.
Tomato Sauce
- Place peppercorns and garlic in TM bowl. Chop 3 sec/Speed 9.
- Add onion, carrot, celery and rosemary to the garlic. Chop 10 sec/Speed 8.
- Scrape down the bowl. Add oil, prosciutto, oregano and Chinese 5 spice. Saute 5 min/Varoma/Speed 1 (MC OFF).
- Add tomatoes, wine, balsamic vinegar, and sugar. Blend 1 min/Speed 5 increasing to Speed 7 over the minute.
- Add the capsicum to the sauce. Cook 30min/100 degrees/Soft Spoon/Reverse Blade (MC OUT). Add the strainer to the top of the lid to prevent splatters.
Chicken Cacciatore
- Place the chicken in an oven-safe baking dish.
- season with the salt, pepper and oregano. Bake 20 minutes.
- Once cooked pour 350g of sauce into a jar. (Try to avoid adding the capsicum to the jar.) Reserve and refrigerate the passata sauce for a future meal.
- Pour the remaining tomato sauce and capsicum into the baking dish with the chicken.
- Scatter the olives and feta around the chicken.
- Bake for 10 minutes. Serve garnished with fresh herbs if desired.

Absolutely delicious. Even my fussy kids ate it! Was a lot of ingredients but mostly pantry staples. First time making it so next time will cook the chicken in the oven while the tomato sauce is cooking in the thermomix (I missed this part in the recipe).

Hi Samana,
I’m sorry to hear about your dietary restrictions. If you remove ingredients it will alter the flavour but I don’t think that will be too much of a problem.
Sub out the five spice for some garam masala if you have it, otherwise just leave it out.
Sub out the pancetta for ham or bacon or just leave it out and add 1/4 tsp of salt.
Leave out the wine and sub with chicken stock to the same volume.
