Calming blue spirulina chai latte powder makes this beautiful chia pudding irresistible. The pudding is made with coconut milk and layered with fruit for the perfect vegan breakfast or brunch.

Preparing this Instagram worthy breakfast is so simple. I usually make my chia pots the night before so they're ready to go out the door when I am! I add all the fancy embellishments in the morning so they are fresh and dont become soggy. There are so many options for toppings that I have provided a list below.
Mermiad Pudding Ingredients
Coconut Milk
Feel free to use your favourite type of milk in this recipe. I like to use coconut milk because it gives the pudding a lovely flavour and a creamier texture. You could use almond or oat milk or just plain cows milk if you are not following a plant based diet.
Spirulina Extract
The chia puddings get their beautiful blue colour from a spirulina extract which is getting a lot of attention at the moment. Blue Spirulina is extracted from algae and is said to be high levels of key nutrients, anti-oxidants and anti-inflammatory benefits.
At the risk of sounding superficial, I just like the beautiful blue colour that can be achieved in this chia pot without using artificial colourings. The Spirulina powder I've used in this recipe has a delicious chai flavour. This is really important to the pudding! Some Spirulina can have a "fishy" flavour, you definitely don't want a fish tasting pudding so please make sure you use the Nutra Organics Mermaid Latte brand.
Chia Seeds
Chia Seeds are one of only a few vegan sources of complete proteins. So these are a great option for a plant based breakfast. They also have Omega 3 fatty acids which are fabulous for brain and joint health.

Mermaid Pudding Toppings
I had a fabulous time decorating my Mermaid puddings. The toppings I used are listed below;
- Frozen Blackberries
- Frozen Blueberries
- Sliced Banana
- Puffed Millet
- Yoghurt coated cranberries (omit for vegan)

Mermaid Chia Pudding
Ingredients
- 250 gm unsweetened coconut milk
- 3 ½ tablespoon black and white chia seeds
- 1 Tbsp maple syrup
- ½ teaspoon Nutra Organics Mermaid Latte additional ½ teaspoon can be added for more colour and flavour
Toppings
- 6 blackberries or as desired
- 3 tablespoon blueberries or as desired
Instructions
- Place the chia pudding ingredients in TM bowl. Combine 10sec/Speed 3.
- Pour into 3 small glasses for individual serves, or one jar to be divided later.
- Allow the mixture to thicken for at least an hour or overnight. Stir occasionally.
- To serve, top the individual glasses with your choice of berries and toppings. If making a layered pudding scoop pudding from the jar into the serving glass. Layer up with fruit, puffed grains and yoghurt.
