Creamy Moroccan Chicken Thermomix

Just like the name says, this is a creamy Moroccan chicken dish. It has just a little spice and is finished with a zing of lemon.

This recipe is one of the easiest "set and forget" dishes on my website. It takes just 5 minutes or so of preparation and then you can leave the Thermomix for the next 25 minutes to work its magic.

The ingredients are all simple pantry staples so it's a dish that you could probably even pull together without a trip to the shops.

I've chosen to serve the creamy Moroccan chicken dish with a simple snow pea side dish. I have included that recipe below because it makes a great flavour combination. You could also serve it with a healthy lentil cous cous dish or brown rice. Even though brown rice takes a little longer to prepare than white rice it is far superior in nutrients. I also prefer the flavour. Today speed was the name of the game so a side serving of greens was in order!

Equipment

  • 1 Thermomix

Ingredients
 
 

  • 25 g garlic
  • 3 long green shallots cut in quarters
  • 180 g onion cut in quarters
  • 40 g oil
  • 1 lemon zest only
  • 2 teaspoon massel chick stock powder
  • ยผ teaspoon turmeric
  • 1 teaspoon smoked paprika
  • 3 teaspoon Moroccan seasoning
  • 200 g chicken stock Campbells Real Stock
  • 150 g Philadelphia Cream Cheese
  • 800 g chicken thigh fillets each fillet diced into 6 pieces

Instructions
 

  • Place garlic and shallots in TM Bowl. Chop 3 sec/Speed 9
    25 g garlic, 3 long green shallots
  • Add onion to the bowl. Chop 3 sec/Speed 4
    180 g onion
  • Scrape down the bowl.
  • Pour oil into the TM Bowl. Saute 6min/Varoma/Speed 1 (MC OUT)
    40 g oil
  • Add all remaining ingredients. Cook 25min/Varoma/Speed 1 (Reverse Blade)
    1 lemon, 2 teaspoon massel chick stock powder, ยผ teaspoon turmeric, 1 teaspoon smoked paprika, 3 teaspoon Moroccan seasoning, 200 g chicken stock, 150 g Philadelphia Cream Cheese, 800 g chicken thigh fillets
  • Once the dish is complete, transfer it to a serving dish and squeeze the juice of one lemon over the dish. Garnish with shallots or parsely

Ingredients
 
 

  • 250 g snow peas top and tail snow peas and cut in half on the diagonal.
  • ยผ cup pine nuts
  • ยผ cup cranberries
  • 1 tsp oil

Instructions
 

  • Heat a small frying pan with oil and add the snow peas.
    250 g snow peas, 1 teaspoon oil
  • Cook them until some of them have just started to go green.
  • Add the pine nuts and continue to stir so the nuts dont burn.
    ยผ cup pine nuts
  • Once the snow peas are green turn off the heat and stir through the cranberries.
    ยผ cup cranberries
  • Leave to sit until ready to serve and the cranberies will be warm.

Notes

This is a very simple side dish. Feel free to adjust the nuts to pistachios or the cranberries to gojo berry.

    Very delicious flavors thank you and I will try again โ€ฆ however i got shredded chicken instead of pieces? I followed recipe - 24min/varoma/sp1 reverse.
    Iโ€™m so confused as to why I got shredded chicken? Is there something I did wrong?

      Hi Romina
      Thank you for your message, I'm pleased you enjoyed the flavours. The only two things I can think of to cause the chicken to shred is cuttinf the fillets too small. You should only get 6 pieces out of each chicken thigh fillet. OR using chicken breast. Chicken breast and the Thermomix are not friends. The breast will always shred in the Thermomix.

    I haven't made this yet but I'm a little confused....you say saute the snow peas till they start to go green??..they're already green..so I'm confused??, but the recipe does sound delish...

      Haha, yes that is confusing! The snow peas will go a brighter lovely cooked green cooler when they are ready. If they are overdone they go a darker green.
