Thermomix Corn Chip Crusted Chicken Nuggets
Today I decided to stray from our regular healthy eating habits to make these corn chip crusted chicken nuggets. I made the nuggets for the children’s after school snack. I know there will be many people in cyber land that will be horrified with this snack. Still, they do have some redeeming features. The chicken nuggets are a good source of protein, and they’re not KFC.
Ok, I know I’m not going to win the title of “Mother of the year” with this recipe but I happy for this to be a sometimes food. Now that I have my disclaimer out of the way…
I know there should be no surprise but, the children LOVED my chicken nuggets!

It’s safe to say I have mixed feelings about his comment. Whilst I’m always pleased when the kids like the food I make, this recipe is not my pride and joy. He wasn’t in the least deterred. “the best ever”
On a happy note, both kids thought the nuggets were better than KFC.
I served the nuggets with a chipotle aioli which is a little bit more sophisticated than your average sauce. The aioli was leftover because at the moment I’m madly trying to finish writing my Thermomix Tex-Mex Cookbook. Once Brett saw the aioli he was all over the nuggets and the kids were put on rations.
I’m giving you the aioli recipe with the chicken nuggets as they go really well together. Plus, I have so many recipes completed for the Tex-Mex book that I’m not sure if there will be enough room for the chipotle mayonnaise!
