Kale Salad w Green Goddess Salad Dressing – Thermomix
My Thermomix Kale Salad packs a huge nutritional punch for all those people looking for an easy, healthy salad, PLUS its absolutely delicious. What makes this salad special is the inclusion of cranberries, pistachio, and green apple. The creamy, green Goddess avocado dressing balances all the flavours and keeps the salad low calorie, but full of healthy fats.
Some days you know you need a nutritional boost! When this happens I like to cram some nutritionally dense foods into my diet. I love this Kale salad because it’s so tasty, yet when I eat it I feel like I’m doing my body a big favour!
When I first made this salad for the family I expected there would be some objections. Firstly, my husband doesn’t believe fruit should be found in a salad. Secondly, the kids don’t like kale… and kale is quite strong in flavour for children.
To my surprised the kale salad was a resounding success, all family members loved it and wanted to have the leftovers for lunch!! Crazy! No one had even noticed the apple!! I think the key to the salad’s success is having sweet, savoury, crunchy and creamy elements.
Step by Step Process Kale Salad
There are just two quick elements to this simple salad. The first step is to make the green goddess salad dressing.
Green Goddess Avocado Dressing
All the dressing ingredients are blitzed together in the Thermomix and then transferred to the fridge until serving.
Use the Thermomix to chop the kale and reserve it in a serving bowl. Grate the apple in the Thermomix. Place all ingredients into the serving bowl and dress with avocado dressing.

Green Goddess Kale Salad is a vegan nutrient & taste sensation. The delicious salad inc cranberries, pistachio & green apple with a creamy avocado dressing.
- 240 g avocado flesh approx 2 small - medium avocado
- 65 g lemon juice fresh squeezed juice approx 1 1/2 lemons
- 5 g garlic
- 15 g fresh coriander (cilantro)
- 2 black peppercorns
- 1/4 tsp salt
- 150 g cold water
- 150-200 g kale stems included
- 175 g green apple cut in quarters. skin on
- 50 g craisins
- 80 g pistachio shelled
- 150 g Danish Feta (creamy) or Tofu for vegans
Place all the dressing ingredients in the TM bowl. Blitz 15sec/Speed 8.
Remove from the TM bowl and refrigerate until needed.
Place half the kale in TM bowl. Chop 3 Sec/Speed 6.
Reserve chopped kale in a serving dish.
Add remaining kale in TM bowl. Chop 3 Sec/Speed 6.
Add to kale the serving dish.
Place the quartered and cored apple in TM bowl. Chop 7 Sec/Speed 4.5
Add the chopped apple to the kale.
Using a spoon toss the apple through the kale.
Add cranberries and pistachio to the kale mixture.
Crumble feta or tofu over the salad.
To serve you can either toss half the avocado dressing through the salad or serve the dressing on the side for people to add their own.
PLEASE NOTE: The avocado dressing recipe makes more than you may need so just add as much as you require to the salad.
The dressing is amazing served on grilled fish or chicken. It can also be used as a sandwich spread.
Store the dressing and salad in the fridge. The dressing will last 2 days without discolouration.
