    Chunky Chocolate Chip Cookies - Best EVER!

    Be warned, these are the best, most chunkiest Chocolate Chip Cookies EVER! This recipe should have a disclaimer. I should warn that once you've made these, all other choc chip cookies will be dead to you!

    It may seem like a big call, but there aren't too many biscuits which I make that I can't resist. Once I start eating these, it is literally one after another. It is a real hazard! It starts with the cookie dough... don't eat the cookie dough or you won't stop!

    So what makes these babies special?? Firstly, brown sugar adds a dark rich sweetness. Condensed milk instead of regular milk adds another crazy sugar hit. Then chunks of milk chocolate and smaller chocolate chips give a double-up of chocolate goodness! 

    These are crunchy chocolate chip cookies, not those horrible soft doughy biscuits that places like Subway make!

    Step by Step Making Chocolate Chip Cookies

    These are cookies are super easy to make either in the Thermomix or in a regular stand mixer. To make in a stand mixer;

    1. cream butter and sugar together until light and fluffy
    2. add the condensed milk and beat for an additional minute.
    3. stir through flour and chocolate chips and chocolate squares.
    4. form the dough into 30 balls and flatten on a prepared cookie slide

    Chocolate Chip Cookies

    Equipment

    • Thermomix
    • Oven

    Ingredients
     
     

    • 250 g salted butter in cubes at room temp
    • 170 g brown sugar
    • 200 g condensed milk
    • 410 g self raising flour
    • 200 g milk chocolate chips
    • 200 g block milk chocolate divided into squares

    Instructions
     

    • Preheat the oven to 170 degrees celsius fan-forced.
    • Line 2 or 3 cookie slides with baking paper.
    • Place the cubed butter in TM bowl. Cream 10 sec/Speed 7.
    • Scrape down the bowl. Position the butterfly in the bowl.
    • Add brown sugar to the butter. Whip 30 sec/Speed 4.
    • Scrape down the bowl.
    • Add condensed milk to the bowl. Whip 30 sec/Speed 4.
    • Remove the butterfly.
    • Add flour, choc chips and chocolate cubes. Use the spatula to manually stir the mixture to combine roughly.
    • Place the lid on TM bowl but remove the MC and insert spatula.
    • Go to dough mode and select, Knead 1 min. Use the spatula to assist.
    • Roll the dough into 30 balls.
    • Place the balls on the prepared cookie slide and flatten them.
    • Leave a lot of room for spreading.
    • Cook the dough for 15-20 minutes.

    Notes

    NOTE:  The cookies will spread quite a lot as they cook, so make sure you leave enough room for spreading. Take a look at the picture above as a guide.
    Once the cookies have finished cooking leave them on the tray to cool as they will be quite soft whilst they're hot.
