Are you looking for a simple weeknight meal that needs very little attention? My Thermomix Beef Curry is the perfect recipe. It ticks all my boxes, easy to prepare, delicious and uses mostly pantry staples. It's also a great recipe to consider if you do weekly meal preparation or if you need some freezer-friendly meals. Even my children enjoy this dish, although I do reduce the chilli down to only one.
I tend to make my beef curry quite regularly as it's not as heavy as most curries. The dish includes yoghurt instead of cream so it's lower in fat and low calorie. If you're following a low carb diet, you will be pleased to know this dish is suitable.
Best of all this is a curry that you can make at home yourself, which is every bit as good as your favourite Indian restaurant.
Thermomix Beef Curry
Ingredients
- 3 Green Cardamon Pods
- 2 teaspoon Cumin Seeds
- 2 teaspoon Coriander Seeds
- 40 g oil
- 200 g onion quartered
- 2 chilli fresh mild, cut in ยฝ
- 20 g garlic
- 20 g ginger fresh
- 1 teaspoon ground turmeric
- 200 g beef stock
- 80 g tomato paste
- 500 g natural yoghurt
- 600 g diced beef Large chunks -not Heart Smart
- 1 teaspoon garam masala
- 2 teaspoon Kasoori Menthi optional
Instructions
- Add the cumin seeds, coriander and cardamom pods to the TM Bowl. Roast 5min/Varoma/Speed 1 (MC OUT).
- Mill the spices. 1 min/Speed 10
- Scrape down the bowl. Add onion, chilli, ginger and garlic. Chop 10 sec/Speed 5.
- Scrape down the TM bowl. Add oil and turmeric. Saute 5 min/Varoma/Speed 2 (MC OUT).
- Add stock, tomato paste, yoghurt and cubed beef. Cook 25 min/Varoma/Speed 1 (Reverse Blade).
- Add garam masala and Kasoori Methi (if using). Cook 1 min/Varoma/Speed 1 (Reverse Blade). Serve

This is delicious. For my chilli-adverse daughter I swapped the child for two tsp sweet paprika. The kasoori menthi (fenugreek leaves) is highly recommended.

Lovely, I cut it down to 1 chilli but should have put in the second. I didn't have Cardamon Pods so swapped for 1/4 teaspoon nutmeg, 1/4 cinnamon. I think some veg would bulk this up a bit as 4 servings would be a bit of a push.
