Peppermint Chocolate Brownie Thermomix

Peppermint Chocolate Brownie is a delicious variation on a classic brownie recipe. Layers of peppermint sandwiched by chocolate goodness.

My basic Thermomix brownie recipe is so easy and gives perfect results every time. Now I find I'm always trialing variations of the recipe. This Thermomix peppermint crisp, chocolate brownie recipe is one of my most delicious variations.

The recipe started as an experiment for my husband. Brett loves peppermint crisp bars and mint patties. Since he doesn't often eat dessert I wanted to tempt him with a peppermint chocolate brownie which included his favourite candy bars.

Happily, both these chocolate bars are regularly on sale for $1 or less at Woolworths. Whenever I notice the chocolates on sale I grab some for this brownie recipe.

Stovetop Brownie Method

Peppermint Crisp Chocolate Brownie Stove Top Version

This recipe started life as a stovetop, melt, and mix style of brownie. I've included the directions below for any non-Thermomix users.

  1. Preheat the oven to 170-180 degrees Celsius. (depending on your oven) *see notes in the recipe card. Line a brownie tray with baking paper.
  2. Melt butter and chocolate in a saucepan over low heat. Stir until smooth.
  3. Remove the chocolate from the heat, and add the sugar. Stir until combined.
  4. Add the flour, baking powder, cocoa, vanilla, and then the eggs.
  5. Beat the batter quickly by hand to prevent the eggs from "cooking".
  6. Once the batter is combined pour half the mixture into the prepared brownie tray.
  7. Arrange half the mint patties and peppermint crisp bars on top of the batter.
  8. Spoon over the remaining brownie batter.
  9. Add the remaining chocolate bars to the top of the brownie
  10. Bake for approximately 50mins depending on your oven.

Thermomix Peppermint Crisp Chocolate Brownie

A decadently rich, dense chocolate brownie with layers of peppermint and a vein of crispy green peppermint crisp.

Equipment

  • 1 Thermomix

Ingredients
 
 

  • 200 g dark chocolate 40% cocoa solids broken into bits
  • 120 g salted butter room temp
  • 100 g sugar ยฝ cup
  • 100 g brown sugar ยฝ cup
  • 100 g plain flour
  • 1 teaspoon baking powder
  • 25 g Dutch process cocoa powder ยผ cup
  • 3 eggs
  • 1 teaspoon vanilla I use vanilla paste
  • 3 Peppermint Crisp Bars broken into large pieces
  • 5 mint patties chopped in half or quarters

Instructions
 

  • Preheat the oven to 180 degrees Celsius.
  • Line a brownie tray with baking paper.
  • Place the chocolate pieces to TM Bowl. Chop 3 sec/Speed 9.
    200 g dark chocolate 40% cocoa solids
  • Add butter and sugar to the chocolate. Melt 7 min/60 degrees/Speed 1.
    120 g salted butter, 100 g sugar, 100 g brown sugar
  • Place flour, baking powder, cocoa powder, vanilla and eggs to the TM Bowl. Combine 10sec/Speed 5 (REV BLADE)
    100 g plain flour, 1 teaspoon baking powder, 25 g Dutch process cocoa powder, 3 eggs, 1 teaspoon vanilla
  • Place half the brownie batter into the prepared tin and smooth the mixture.
  • Top the brownie batter with pieces of mint pattie and peppermint crisp bars.
    3 Peppermint Crisp Bars, 5 mint patties
  • Add the remaining brownie batter to the top of the slice. 
  • Add remaining peppermint crisp pieces and mint patties to the top of the brownie.
  • Bake for 50-60 minutes or until cooked through when tested with a skewer.
  • Allow the brownie to cool in the tin.

Notes

Do not overcook the brownie, it should still be a little moist.
Cool brownies in the tray and refrigerate.
The brownies are much easier to cut neatly once it's been refrigerated.
 
Watch and test the brownies as they cook as everyones oven is different. Don't over cook.
