Thermomix Coleslaw is a super easy salad or side dish to make. You can pair it with any delicious aioli or dressing to take it to the next level or choose a classic mayonnaise for a traditional coleslaw.

I know it can be tempting to buy a packet of dry slaw from the supermarket or even one of those "dressing drenched" tubs of coleslaw, but homemade really is so much better! Homemade Thermomix coleslaw tastes so much better than the bought varieties. This salad is worth the extra five minutes it takes to make.
Is Homemade Coleslaw Healthier than Store-bought?
When it comes to homemade salads, it's not just the taste that's an improvement! The nutritional value of preparing salads is far superior to store-bought varieties.
The reasons why this is true;
- Produce starts to lose nutrients from the time it's harvested. Pre-made salads undergo longer processing times to get from the farm to the shelf. This means the vegetables used in the salad are considerably older than the unprepped vegetables on the shelf.
- Once you cut up fruit and vegetables, the oxidisation further deteriorates the nutrient content. Pre-cut salads usually have a "use by date" of a week or more after the packaging. This means the nutrients are depleting on the shelf at a faster rate than the whole vegetables.
- Making your own salads allows you to control the ingredients and avoid any additives.
- Salads with dressing added, such as tub salads, could have a large amount of sugar, unhealthy fats or artificial flavours.
Cost-effective Coleslaw
Another reason I prefer to make my own coleslaw in the Thermomix is that it's much more cost-effective. This salad contains barely any ingredients. Half a head of green cabbage and a carrot or two will make enough coleslaw to feed a small army for multiple days. Add a few other special touches such as green shallots from my garden and maybe a little parsley. However, I only add that if it's already in the fridge, and you have a classic salad without the huge cost. Conversely, in our house, premade salads are only just enough as a side for one meal.
Thermomix Classic Coleslaw Ingredients
There are so many ingredients that can go into coleslaw. On my website, I have a recipe for Thermomix Apple Slaw and a herbed Coleslaw, which are fabulous variations of the classic coleslaw. The herbed coleslaw was featured as part of my Salmon Burger dish and goes perfectly with the seafood flavours.
My classic coleslaw is made with green cabbage, carrot, and some sliced green shallot for a bit of colour. You could also add a little flat-leaf parsley. It's simple, and I always seem to have the ingredients on hand. The herbs add a bit of fresh flavour. I also like coriander, but I know that can be polarizing. Dill is another herb that tastes fabulous in a salad.
The ingredients for this coleslaw are shown above. I decided to keep this salad simple for when it is an accompaniment to other dishes and not the main feature. Using the cutter attachment allows the cabbage slices to be thin and uniform in size. The thin "cutter" setting for cabbage looks the nicest for coleslaw, while the thick grater setting looks best for carrot in the salad.
Coleslaw Made in TM5 & TM6 Traditional Method
As you can see by the more irregular shape of the cabbage and the diced look of the carrot, I have made this coleslaw directly in the bowl without the use of the cutter. I have given instructions for making the salad using the traditional Thermomix method and using the new cutter attachement.
The cutter can be used by the TM5 in manual mode so I have given directions for this too.
Step By Step Coleslaw with Thermomix
Making the coleslaw in the Thermomix was almost too easy to photograph but I thought I would show you the size dice you can expect from the directions below.
FAQ Thermomix Coleslaw
Remove the chopped carrot and reserve in the salad bowl. Put the Thermomix back on for another 2 seconds speed 5.
If you cut each section into roughly 50-70g chunks the Thermomix should chop it well for a coleslaw.
Chop the cabbage for an extra 2-3 seconds on speed 4.
Dill, coriander and chives are all delicious in a coleslaw.
Dry slaw can be kept 4-5 days in an airtight container. Once the coleslaw has been dressed it should be used within about 24 hours.
Coleslaw is not able to be frozen.

Thermomix Coleslaw
Equipment
- 1 Mandolin
Ingredients
- 400 g green cabbage chopped into 7-8 pieces if not using the cutter attachment
- 1 large carrot approx 100g peeled and cut in quarters
- 2 long green shallots sliced finely
- 15 g fresh parsley roughly chopped
Garlic Aioli
- 1 clove garlic
- ยผ teaspoon salt
- 4 black peppercorns
- 1 egg
- 1 lemon juice only
- 450 g oil I like to use grapeseed, macadamia or almond oil but you can use any lightly or non flavoured oil.
Instructions
Traditional Thermomix Coleslaw Method
- Place the green cabbage in the Thermomix. Chop 5 sec/Speed 4400 g green cabbage
- Reserve in serving bowl.
- Place the carrot in the bowl. Chop 4 sec/Speed 51 large carrot
- Add to the reserved cabbage.
- Add the shallots and parsley to the cabbage.2 long green shallots, 15 g fresh parsley
- Toss the ingredients to combine.
- Reserve
Cutter Attachment Method
- (TM5 & TM6)Add the shaft to the TM Bowl. Build the cutter attachment with the dark grey slicing blade facing up.
- (TM6) From the home screen, slide across to the functions menu and select slice mode.
- (TM5) Turn the blade speed to 4, reverse blade).
- Feed the cabbage through the chute.
- Remove the cabbage and reserve in the serving bowl.
- (TM5 & TM6) Reverse the blade so the light grey side of the blade is facing up. This is the grating side.
- (TM6) Select grating on the functions menu - Thick.
- (TM5) Turn the speed selector to 4
- Feed the carrot into the chute. Reserve in the bowl with the cabbage.
- Add the shallots and parsley to the cabbage.
- Toss the ingredients to combine.
- Reserve
Garlic Aioli
- Add the garlic, salt, and pepper to the TM bowl. Mince 3 sec/Speed 9.1 clove garlic, ยผ teaspoon salt, 4 black peppercorns
- Scrape down the TM bowl.
- Add egg and half the lemon juice. Mix 3 sec/Speed 4.1 egg, 1 lemon
- Add the Butterfly whisk to the TM bowl.
- Set the timer for 3 min/speed 4. Slowly add the oil and lime juice
- Alternate between the lemon juice and the oil until the time is finished.450 g oil
- Reserve aioli in a jar to dress the Apple Slaw
Assembly
- Serve the coleslaw with a spoonful of dressing.
- Reserve any remaining garlic aioli and refrigerate until needed.
