Tuscan chicken is a recipe that includes Mediterranean flavours such as semi-dried tomatoes, Italian herbs, and fresh basil. The dish is then finished with sour cream giving it a rich, moreish appeal.
After sharing my Creamy Garlic Sauce I have had a lot of people asking for more creamy goodness. The garlic sauce can be paired with just about anything but my Tuscsan sauce is made a little bit differently.
This recipe involves throwing all the ingredients in the Thermomix bowl or frying pan, depending on how you are making it, and letting the flavours do their thing! The Tuscan Chicken dish should be on the table in about 30 minutes. This is a recipe to keep handy for those busy weeknights.
In case you're wondering, this isn't really a Tuscan recipe. It has been given that title because the flavours inspire thoughts of a Tuscan holiday. I am merely continuing the naming convention. I first tried this dish in America about 7 years ago at "The Olive Garden." The Olive Garden is a well-known franchise chain restaurant that specialises in American-Italian-style food.
What to Serve with Tuscan Chicken
This is an extremely versatile dish so it will go well with all sorts of accompaniments. You could choose a low-carb option or pair it with comfort food for a truly Winter warming dish.
- Steam green beans
- Raw zucchini noodles
- Mashed Potato
- Boiled Pasta
- Cheese Garlic Bread
Substitute Ingredients
Chicken Thigh - I prefer to use chicken thigh fillets as they have more flavour than breast meat and aren't as dry. If you are cooking this recipe in the frying pan you can choose either cut of meat. If you are making the dish in the Thermomix PLEASE use chicken Thigh fillets ONLY! The Thermomix is not kind to breast meat!
Verjuice - You can substitute Verjuice for a dry white wine.
Italian Herbs - This is a blend you can usually find in the supermarket. If it's not available just use ยฝ teaspoon each of dried oregano, thyme, basil, and rosemary. Or in a pinch just use oregano.
Massel Chicken Stock Powder - I love this product so I find it hard to provide a substitute. If you have a favourite stock powder you can substitute it.

Leftovers can be kept for 3-4 days in an airtight container.
Yes, this is a great make-ahead dish, it freezes well.
The wine in the recipe is cooked for 18 minutes which will boil off any alcohol content making it suitable for children.

Conventional Cooking Method
For the Creamy Tuscan Chicken ingredients please see the recipe card.
- Add chopped garlic, diced onion, chicken strips, and oil to a large heavy-based frying pan.
- Cook over a medium heat whilst stirring, until the chicken is cooked through.
- Add smoked paprika, Italian herbs, semi-dried tomatoes, stock powder, sour cream, and verjuice, and simmer for 5-10 minutes
- Combine cornflour and water in a small cup, and stir until there are no lumps.
- Add the cornflour slurry to the Tuscan Chicken and stir it through the dish.
- Finally, add the spinach and fresh basil. Stir through the dish and turn off the heat.
- Sprinkle over the parmesan cheese and garnish with extra fresh basil.
Tuscan Chicken Recipe
Equipment
Ingredients
- 50 g parmesan cheese
- 20 g garlic
- 200 g brown onion cut in half
- 20 g oil from sundried tomatoes
- 2 teaspoon Italian spice mix
- 1 teaspoon smoked paprika
- 750 g chicken thigh fillets cut into 1 ยฝ cm thick strips
- 100 g semi-dried tomatoes cut into strips
- 15 g Massel chicken stock powder
- 150 g sour cream
- 50 g verjuice or dry white wine
- ยผ teaspoon cracked black pepper
- 100 g baby spinach
- 15 g fresh basil chopped - extra to garnish
- 1 TBS cornflour
- 1 TBS water
Instructions
- Cut parmesan into 4 cubes and place in TM Bowl. Mill 4 sec/Speed 9.50 g parmesan cheese
- Remove parmesan and reserve for later. Without cleaning the bowl.
- Place garlic in the TM Bowl. Chop 2 sec/Speed 9.20 g garlic
- Add onion. Chop 3 sec/ Speed 5.200 g brown onion
- Scrape down TM bowl.
- Add oil, Italian herbs and paprika. Saute 5 min/Varoma/Speed 2. (MC OUT)20 g oil, 2 teaspoon Italian spice mix, 1 teaspoon smoked paprika
- Add the chicken, stock powder, semi-dried tomatoes, sour cream, verjuice and pepper. Cook 10 min/105 degrees/ Slow Spoon/Reverse Blade.750 g chicken thigh fillets, 100 g semi-dried tomatoes, 15 g Massel chicken stock powder, 150 g sour cream, 50 g verjuice, ยผ teaspoon cracked black pepper
- Stir the Tuscan chicken ensuring all the pieces of chicken are seperated.
- Add spinach and basil. Cook with the spatula in place of the MC. 5 min/10 degrees/soft spoon/Reverse Blade. (Use the spatula to assist in combining the spinach.)100 g baby spinach, 15 g fresh basil
- Combine the cornflour and water in a small cup. Stir until there are no lumps.1 TBS cornflour, 1 TBS water
- Add the slurry to the TM Bowl. Cook 3 min/100 degrees/Soft Spoon/Reverse Blade.
- Serve. Garnish with extra basil and reserve parmesan cheese
