1 Min Keto Mug Cake – Red Velvet Chai
Imagine your favourite chai latte meets a warm mug cake and they have a love child! This red velvet Chai mug cake is that baby! Best of all, it’s a Keto mug cake so you can enjoy this sweet dessert and still stay Keto.
The other day I was drinking a cup of my favourite Chai Latte and really enjoying the vanilla, cinnamon and spice flavours with the coconut milk. I was so excited about how good it tasted and looked, that I plastered Facebook and Snapchat with pictures of my beautiful pink latte… yes I’m a dag, my children tell me often.
Whilst I was drinking the pink latte and relaxing I started to imagine a moist delicious coconut mug cake with these flavours. An idea of a recipe started to form, that recipe has evolved to become this Red Velvet Latte Keto Mug Cake. WOW, what a mouthful… hehe, pun intended 🙂
So first of all, what is a pink latte?
A pink latte is the most Instaworthy latte EVER! It not only tastes amazing but it deserves to have its picture taken, it’s the supermodel of lattes. But seriously, I have been loving a range of lattes from The Bircher Bar. At the moment I’m obsessed with the Beetroot Chai Latte. I can’t tell you how amazing it is! Obviously, it’s pink… so I kind of love that because it’s pretty and makes me feel very special to drink something so gorgeous. Also, it tastes better than any chai latte I’ve tried so far!! Do you think that’s a big call? Maybe but I promise it’s true. The flavour is 100% sweet vanilla chai and I promise no beetroot taste. I’m sure you will find there are many health benefits associated with the beetroot. At the risk of seeming nutritionally shallow, it’s the pink, chai I’m in love with.

Keto Mug Cake Recipe
Imagine your favourite chai latte meets a warm mug cake & they have a love child! My red velvet chai cake is that baby! Best of all it's a 1 min Keto mug cake!
- 20 g butter
- 40 g Philadelphia Cream Cheese
- 2 TBS coconut flour *available in the supermarket
- 1 tsp Beetroot Chai Latte The Bircher Bar Range
- 1/4 tsp baking powder
- 1 TBS xylitol *sugar is fine if your not Keto
- 1 egg

Place butter and cream cheese into a microwave-safe cup. Microwave High 20 sec.

Stir microwave for a further 10 seconds if required.

Add all the dry ingredients to the mug and stir until combined.

Add the egg to the mug and stir with a fork until the batter is smooth.

Cook for 1 minute 20-30 seconds depending on the strength of your microwave.
Microwave cooking times vary quite a lot. When cooking the Keto mug cake once you reach the one minute cooking time watch the cake carefully. You want to stop cooking as soon as most of the moisture has gone from the top of the cake. If there is a tiny bit of uncooked cake don't worry as it will continue to cook.
