Lasagna soup is everything you love about lasagna, the delicious flavour, the rich meaty goodness, and the warming homely feel. However, the soup version is so much simpler and quicker to make and a little friendlier on the waistline.

This recipe was suggested by one of my lovely Facebook group members. She sent me the link to a recipe on Taste and asked if I thought it could be made in the Thermomix. On that particular day, it was windy and wet. A soup was exactly what I wanted to eat!
I looked at various different recipes for the soup and also reviewed the comments after each recipe. There was a mix of opinions on each of the recipes. Some people were praising the concept and others were commenting that the dish tasted like watery bolognese.
I'm sure you can imagine how much the negative comments worried me. I didn't want my Lasagna soup to taste watery, but I also didn't think a big bowl of thick bolognese could be classed as a soup. BUT, I knew If I nailed this recipe I would have a very happy family!
Does your family LOVE lasagna? Mine does, but I absolutely hate making it!! It's not that it's a hard dish to make, but it does take time. Firstly I make the meat sauce, then the béchamel sauce. Then the dish gets assembled by alternating between layers of meat, béchamel sauce and pasta sheets. Once complete the lasagne is baked for 40 miutes until the pasta sheets are al denta and the top is golden.
It's a labour of love and it takes time and a lot of dirty dishes. So I don't make it very often. When I spend hours in the kitchen I want to prepare a masterpiece... not lasagna. So I had high hopes for this recipe. My dream was the family would embrace this soup and I would never have to make a traditional lasagna again!
The Taste Test
So in the moment of reckoning, what did the family think?
Firstly, he who does not eat... aka the 16-year-old came home from school in a HORRIBLE hormonal mood. He got cranky because I bought the wrong 2 minute noodles. Yes, he thinks 2-minute noodles are food. I apologized for getting the wrong noodles and then felt like an idiot for apologizing to an ungrateful hormonal teenager. So I told him to eat the dinner I had served instead and then go to his room if he can't be polite.
I quickly exited the kitchen and went back to editing the pictures of the soup for this story. Next thing a voice from the kitchen yells out.
"This is awesome! It's exactly what I felt like. Thank you so much mum!!"
I nearly fell over dead on the spot. What a miraculous turn around!!!
The rest of the family enjoyed the soup also but it was the huge change in attitude from the teenager that was mind-blowing!! I will continue to make this soup just so I have a weapon to calm the hormonal one!
Things I love about Lasagna Soup
There are so many things to love about this recipe;
- Most of the ingredients are pantry items, you are likely to already have everything on hand.
- Thermomix does all the work. There is no need to be in the kitchen.
- This recipe is inexpensive, and great if you're on a budget or nearing payday.
- Hardly any washing up!
- The flavours are sure to be a hit with all the family members.
- It tamed my hormonal man/child teenager...

Yes! Any pasta will work fabulously in this dish.
Yes, it will, please take note of the cooking times on the pasta packet and adjust the cooking time as needed.
Any stock powder or paste can be substituted for beef stock. Although beef stock does give a richer flavour.
Absolutely! That would be the best way to serve this!

My all-time favourite dish is Slow Beef Cheeks, the meat just falls apart. You can choose to have it with some homemade pasta or on fluffy mashed potatoes as I have pictured below.
A very close second in line is Maple Syrup Lamb Shanks, here the meat will just fall from the bone. I haven't pictured the sauce but just imagine a richly sweet, but meaty sauce. You could serve this over mashed potato, but if you're watching your carb intake you could always have it with mashed cauliflower. My cauliflower has additional flavour from some grated parmesan cheese.
Last but not least I have given Pea & Ham Soup a new lease on life. Serve this with some fluffy bread rolls like the ones I have pictured in this recipe.

Thermomix Lasagna Soup
Equipment
Ingredients
- 10 g fresh basil
- 15 g garlic
- 200 g onion cut in half
- 120 g carrot cut in 3 pieces
- 140 g zucchini cut in 3 pieces
- 15 g olive oil
- 2 teaspoon Massel Beef Stock powder
- 2 ยฝ teaspoon mixed dried herbs
- 500 g lean beef mince
- 400 g tinned tomato chopped up
- 200 g tomato passata
- 60 g tomato paste
- 350 g water
- 100 g instant lasagna sheets broken into pieces
Topping
- 200 g sour cream
- 120 g grated tasty cheese
- 2 g fresh basil leaves
Instructions
- Place basil and garlic in TM Bowl. Chop 3 sec/Speed 9.10 g fresh basil, 15 g garlic
- Add onion to the bowl. Chop 2 sec/speed 6.200 g onion
- Add carrot to the bowl. Chop 2 sec/Speed 6.120 g carrot
- Add zucchini to the bowl. Chop 2 sec/Speed 6.140 g zucchini
- Scrape down the bowl.
- Add oil, stock and mixed herbs. Saute 5 min/Varoma/Speed 1 (MC OUT)15 g olive oil, 2 teaspoon Massel Beef Stock powder, 2 ยฝ teaspoon mixed dried herbs
- Break up the mince as you add it to the TM Bowl. Saute 5 min/Varoma/Soft Spoon (REV BLADE) (MC OUT)500 g lean beef mince
- Add tomato, tomato paste, tomato passata and water. Stir to combine. Cook 15min/Varoma/Soft spoon (REV BLADE)400 g tinned tomato, 200 g tomato passata, 60 g tomato paste, 350 g water
- Add broken up lasagna sheets. Cook 12min/Varoma/Soft Spoon (REV BLADE)100 g instant lasagna sheets
Topping
- Combine the sour cream and cheese in a bowl and reserve.200 g sour cream, 120 g grated tasty cheese
- Spoon the soup into bowls and top with the sour cream mixture, add fresh basil leaves to garnish.2 g fresh basil leaves

Soup Serving Suggestions
Like all soups this one is perfect served with a crusty roll or garlic bread. I've included a cheese and sour cream topping for the dish so that it mimics the bechamel sauce in a traditional lasagna. But if you wanted a lighter meal you could easily omit the topping.

Yes I think this would work with lentils!! What a great idea. You would gut have to reduce the cooking time so they didn't end up mushy. I will have to take a look at the recipe during winter and come up with a recipe.
