Thermomix Cajun chicken dinner is a delicious weeknight meal that's on the table in just over 30 minutes. The spicy Cajun chicken seasoning is a perfect match for the creamy avocado sauce.

This dish uses layered cooking, which means you use all the accessories that came with your Thermomix to take advantage of the steam and cooking layers of the Thermomix. This allows you to feed a lot more people, and once dinner is on, there is nothing to do but put your feet up. It doesn't get much easier than that!
Thermomix Layered Cooking
Layered cooking allows this table to be on the table quickly! The sweet potato is cooked in the internal steam basket, while the chicken breast is cooked in the Varoma.
The preparation is as simple as peeling the sweet potato and dicing it into 1-2cm cubes. The cubes are added and placed into the Internal steam basket and into the TM Bowl.
Meanwhile, the chicken is seasoned and placed on the Varoma trays. The steam produced by water in the bowl cooks the sweet potato and steams the chicken.
Serving Suggestions Cajun Chicken Dinner
In some of the photo's I served the Cajun chicken with a homemade lentil and couscous salad. You could make a salad if you were feeding extra people and needed to stretch the meal a little further. You could choose one of the other salads I have on the site, such as my Apple Slaw, Classic Thermomix Coleslaw, or even white rice. I love it with the creamy sweet potato mash you will find in this recipe below. If you're short on time, you could use a commercially prepared salad, but the sweet potato mash really doesn't take any longer. You could also just go regular Thermomix Mashed Potato or a Low-Carb Cauliflower Mash

Avocado Cream Sauce
The creamy avocado sauce makes this recipe really special. The recipe is my dad's. He always serves this sauce with fish. I've converted the recipe for the Thermomix, which means you don't need to be concerned about the cream boiling over as it reduces or the avocado getting bitter from being overheated in the saucepan.

FAQ Thermomix Cajun Chicken
Everyone has their own preferences in chicken. Both will work equally as well in this recipe. I prefer the thigh fillets and the cook a little quicker than the breast.
The avocado sauce needs to be eaten with a meal the following day. If you don't think you will finish it all, halve the sauce recipes.
No, the sauce is not suitable for freezing.
Yes, once the chicken has been on for 15 minutes other vegetables can be added as desired.
Thermomix Cajun Chicken with Avocado Cream Sauce
Ingredients
- 1000 gm chicken breast or thigh 3-4 fillets (butterfly the breast so its thinner)
- 20 gm Cajun spice mix Masterfoods or homemade
- 650 gm water
Avocado Cream Sauce
- 3 cloves garlic
- 20 gm butter
- ¼ teaspoon salt *or to taste
- 200 gm cream
- 2 avocado
- 1 ½ TBS lemon juice *or to taste
Sweet Potato Mash
- 600 gm sweet potato peeled and diced 1-2 cm dice
- 20 gm butter
- 50 gm milk
- ¼ teaspoon salt optional
Instructions
- Add water to the TM Bowl.650 gm water
- Place the internal steam basket in the TM bowl.
- Weigh the sweet potato into the basket and place the lid on the TM bowl. (MC OUT)600 gm sweet potato
- Season the chicken breasts with Cajun spice mix on both sides.1000 gm chicken breast or thigh, 20 gm Cajun spice mix
- Place a trivet in the bottom of the deep Varoma dish. Add a chicken breast to the bottom of the Varoma. (The trivet keeps the chicken from covering the steaming holes.)
- Stack the shallow Varoma tray on top of the deep tray and add the remaining chicken breasts.
- Place the lid on the Varoma. Steam 20min/Varoma/Speed 2.
- After 20 minutes, reverse the chicken so that the chicken in the deep tray is in the top tray and turn all the chicken over. Steam 15 min/Varoma/Speed 2.
- Remove the Varoma trays and internal steaming basket and reserve until serving.
Avocado Cream Sauce
- Add garlic to TM bowl. Chop 3 sec/Speed 9.3 cloves garlic
- Scrape down TM bowl and add the butter. Saute 3 min/Varoma/Speed 2 (MC OUT)20 gm butter
- Add salt and cream to the TM bowl. Cook 7min/100 degrees/Speed 1. (MC OUT)¼ teaspoon salt, 200 gm cream
- Add the avocado and blend. 5 sec/speed 4.2 avocado
- Add lemon juice. Combine 3 sec/Speed 5. Taste and adjust lemon juice and salt until the flavour is as desired.1 ½ TBS lemon juice
- Pour the avocado sauce into a serving jug.
Sweet potato Mash
- Drain the water from the TM Bowl.
- Without cleaning the bowl, add the sweet potato, milk, salt, and butter to the TM bowl. Combine 3 sec/Speed 3.50 gm milk, ¼ teaspoon salt, 20 gm butter
- Scrape down and repeat if necessary.
- Plate the meal and serve.
