Thermomix Cajun chicken is a delicious weeknight meal which is on the table in just over 30 minutes. The spicy Cajun chicken seasoning is a perfect match for the creamy avocado sauce.
I've served the Cajun chicken with a homemade lentil and couscous salad, you can find the recipe here. If you're short on time you could use a commercially prepared salad. Another time-saving side dish is sweet potato mash. I've given the instructions for the mash. Although its so simple, just peel and dice sweet potato and add it to the internal steaming basket whilst the chicken is cooking.
If you're following a LCHF or Keto diet the Cajun chicken with avocado sauce is compliant with the right choice of side dish.
Thermomix Cajun Chicken with Avocado Cream Sauce
Ingredients
- 1000 gm chicken breast 4 fillets
- 20 gm Cajun spice mix Masterfoods
- 650 gm water
Avocado Cream Sauce
- 3 cloves garlic
- 20 gm butter
- ¼ teaspoon salt *or to taste
- 200 gm cream
- 2 avocado
- 1 ½ TBS lemon juice *or to taste
Sweet Potato Mash
- 600 gm sweet potato peeled and diced
- 20 gm butter
- 50 gm milk
- ¼ teaspoon salt optional
Instructions
- Add water to the TM Bowl.
- Place the internal steam basket in the TM bowl.
- Add sweet potato to the basket and place the lid on the TM bowl. (MC OUT)
- Season the chicken breasts with Cajun spice mix.
- Place 2 egg rings in the bottom of the deep Varoma dish. Add a chicken breast to the top of each egg ring. (Keeps the chicken from covering the steaming holes.)
- Stack the shallow Varoma tray on top of the deep tray and add the remaining chicken breast to that tray.
- Place the Varoma lid on the trays, and stack the trays on the TM lid. Steam 20min/Varoma/Speed 2.
- After 20 minutes reverse the chicken so the chicken which was in the deep tray is in the top tray and vice versa. Steam 15 min/Varoma/Speed 2.
- Remove the Varoma trays and internal steaming basket and reserve until serving.
Avocado Cream Sauce
- Add garlic to TM bowl. Chop 3 sec/Speed 9.
- Scrape down TM bowl and add the butter. Saute 3 min/Varoma/Speed 2 (MC OUT)
- Add salt and cream to the TM bowl. Cook 7min/100 degrees/Speed 1. (MC OUT)
- Add the avocado and blend. 5 sec/speed 4.
- Add lemon juice. Combine 3 sec/Speed 5. Taste and adjust lemon juice and salt until the flavour is as desired.
- Pour the avocado sauce into a serving jug.
Sweet potato Mash
- Without cleaning the bowl add the sweet potato, milk, salt and butter to the TM bowl. Combine 3 sec/Speed 3. Repeat if necessary.
Nutrition
The creamy avocado sauce makes this recipe really special. The recipe was actually my dads' and he always serves it with fish. I've converted the recipe for the Thermomix which means you don't need to be concerned about the cream bowling over as it reduces or the avocado getting bitter from being added to the saucepan.
