Thermomix Mac and Cheese

This is the easiest Thermomix Mac and Cheese recipe you will find on the internet! Plus, there are no hidden vegetables just lush cheesy goodness, with a crunchy baked cheese topping.

This recipe is super easy, the Thermomix needs very little help to get my Mac and Cheese on the table. Best of all the recipe makes a huge baking dish full of Macaroni cheese, so you will probably have leftovers for the following night. I just love it when there are leftovers!

Have you ever cooked pasta in your ThermoServer?

Did you know you can cook pasta in the ThermoServer? I love this trick because I find watching a pot of pasta boiling on the stove really tedious. Worse still, if I walk away it's sure to boil over! With the Thermomix busy making the sauce, preparing the pasta in the ThermoServer is just too easy. Both the pasta and the sauce can be ready at the same time with no extra effort.

This pasta method involves warming the ThermoServer in hot tap water whilst you wait for the kettle to boil. Then add the pasta to the Thermoserver, and pour the boiling water into the Thermoserver. Make sure to fill it to the top. Give the pasta a stir and then add the lid to the Thermoserver.

The pasta is left undisturbed whilst the accompanying sauce is made. 15-25 minutes is all the time it will take to have perfectly cooked pasta.

What Cheese is best for Mac & Cheese?

When it comes to the good old Mac and Cheese I really think it's good to choose a few complementary types of cheese instead of just one variety. I usually go for a three-cheese mix, because 3 kinds of cheese are better than 2. Below is my recommendation, but you can always mix it up a bit.

  • Vintage Cheddar or Colby - good flavour and melts well through the sauce.
  • Mozzarella - Adds a stringy, creamy texture to the dish.
  • Parmesan or Romesco - a sharp flavour, espeically good in the topping.

Is Pre-grated Cheese ok?

Please don't buy pre-grated cheese. The most important thing about the cheese in this dish is it should be block cheese. Pre-grated cheese has fillers, anti-caking agents, and preservatives. All those extras will make your sauce grainy and gross.

Grating your cheese in the Thermomix takes 3 seconds to complete. The finished dish will taste so much nicer using block cheese and you will be putting far fewer additives into your food and your body.

Grating Cheese

For beautifully grated cheese you can use your Thermomix cutter attachment. I usually buy block cheese and grate the whole block at once. I place one container in the fridge and one in the freezer to keep fresh.

What Pasta Should You Use in Macaroni Cheese?

Macaroni is the traditional pasta of Mac and Cheese, but it isn't essential to use only macaroni. When you're making this dish feel free to experiment with other types of pasta. It's best if the pasta is in small pieces and has curves to trap the sauce.

You could try any of the following pasta;

  • Elbow pasta
  • Small Fusilli
  • Small Shells
  • Rotini

My Thermomix Mac and Cheese recipe has nothing hidden! Just delicious cheesy goodness and loads of macaroni. I've topped the dish with a crunchy baked cheese topping.

Equipment

  • Thermomix
  • ThermoServer
  • Oven
  • 1 Thermomix Cutter Attachment

Ingredients
 
 

  • 100 g parmesan cheese cut into 2 pieces
  • 250 g strong tasty cheese cut into 4 pieces *Colby, cheddar, vintage cheddar
  • 100 g mozarella cheese cut into 2 pieces

Crunchy Topping

  • 45 g panko crumbs
  • 5 g fresh chives finely sliced
  • 30 g salted butter melted

Macaroni & Sauce

  • 250 g macaroni
  • 60 g salted butter cut in cubes
  • 750 g full cream milk
  • 50 g plain flour
  • ยฝ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ยผ teaspoon salt
  • ยผ teaspoon cayenne powder *optional
  • 5 g fresh chives

Instructions
 

  • Preheat the oven to 180 degress
  • Lightly grease a baking tray with butter and reserve.

Macaroni

  • Immerse a ThermoServer in hot water.
  • Boil a full kettle of hot water
  • Add the macaroni to the Thermoserver and fill to the top with boiled water. Stir the pasta, then cover with the lid. Leave undisturbed.
    250 g macaroni

Pre-Grate Cheeses

  • Place parmesan cheese in TM bowl Grate 3 sec/Speed 9. Reserve
    100 g parmesan cheese
  • Place cheddar cheese in TM Bowl. Grate 3 sec/Speed 9. Reserve in a new bowl
    250 g strong tasty cheese
  • Place Mozzarella cheese in TM bowl. Grate 2 sec/Speed 9. Reserve with tasty cheese. (best to put in the freezer for 20-30 minutes first to firm up)
    100 g mozarella cheese

Crunchy Topping

  • Place the panko crumbs in a bowl.
    45 g panko crumbs
  • Add 2TBS of the reserved parmesan cheese to the panko crumbs
  • Add melted butter and chives to the crumb.
    30 g salted butter, 5 g fresh chives
  • Stir until the crumb is coated with butter and reserve.

Sauce

  • Add butter to the TM bowl. Melt 2 min/Varoma/Speed 1
    60 g salted butter
  • Add milk, flour, paprika, onion powder, garlic powder, salt, smoked paprika, cayenne powder. Mix 10sec/Speed 8.
    750 g full cream milk, 50 g plain flour, 1 teaspoon garlic powder, 1 teaspoon onion powder, ยผ teaspoon salt, ยผ teaspoon cayenne powder, ยฝ teaspoon smoked paprika
  • Add chives to TM Bowl. Cook the sauce 6 min/90 degrees/Speed 3.5.
    5 g fresh chives

Assembly

  • Once the sauce is finished cooking drain the macaroni, then return to the Thermoserver.
  • Add all 3 types of cheese to the macaroni and stir through.
  • Pour the sauce over the macaroni and stir through.
  • Transfer mac and cheese to a prepared oven dish.
  • Sprinkle over the reserved panko crumb topping
  • Place in the oven for 25minutes or until golden.
  • Garnish with extra paprika and chives if desired. Serve immediately

Notes

NOTE:
  1. The pasta won't be completely cooked in the Thermoserver.  This is okay because it will continue to cook in the oven.
  2. Don't overbake the Macaroni Cheese in the oven. The longer the dish is in the oven the more the cheese sauce will be absorbed by the pasta. This will make the pasta softer and give less sauce.

    Hi Julie, we tried the thermoserver with gluten free pasta. But sadly it was mush. Back to the drawing board I quickly cooked gf spirals on the stove top. I need to experiment with pasta in the server to get it right.

    Hi there,
    I found this recipe while researching whether to invest in a Thermomix. Looks delicious. Sorry for this ignorant question, but to grate the cheese in your recipe, do you need to use the extra grater attachment? Just hoping to save on washing up where ever possible!

      You can simple through the cubes of cheese (a 250g block cut into quarters) into the Thermomix bowl and put it on for 3 seconds speed 9 and you have grated cheese.

    OMG Julie this is the best Mac and Cheese I have ever made and I am in my early(very early lol) 70's.However because there is only two of us I made the mistake of halving the recipe,never again,I could just eat and eat this, so yummy.
